And what a sweltering summer it has been. I never thought I would miss those winter nights in the UK…But the weather now is perfect and I would not swap this time of the year in Cyprus…Well summer was great in Nippon, new dishes, new customers and lots of work…And I want to say thanks to my great staff at Nippon Japanese….We were also visited a few times by Peter & Jordan, who love Sushi!!!!

Pan fried red mullet fillets
with herbed tomato and prawns
Ingredients:
4 fillets of red mullet (can be bought in all supermarkets)
1 tablespoon of sugar
2 red tomatoes seeded and diced
1 cup of small, peeled prawns
6-8 leaves of fresh basil
1 spring of fresh tarragon
1 whole garlic glove chopped up
1 knob of butter
3 tablespoons of olive oil
2 tablespoons of flour
½ cup of white wine
salt & pepper
